Lovely 4th of July Inspiration

We came across this photo shoot on Ruffled a while ago and had to book mark it! It was shot by photographers, Shannon Mathis and Krysten Jaume of Mi Amore Photo. We were taken by the beauty and femininity of the photos and how they were so gracefully captured. One of the aspects we loved most about these photos were the way they used old and vintage items combined with gorgeous dresses and an all American backdrop! It truly celebrates America in unique and elegant way. 










DIY Sparkler Cupcake Toppers

A couple of weeks ago we did shared a paper straw birthday candle diy with you! We had so much fun with it, we thought we would put a patriotic, 4th of July twist on it. So we decided to use red, white and blue straws this time and make them into sparklers! With a few metallic strands, the straws were 4th of July ready! These would be really festive to top your cupcakes with if you are attending a party to watch the fireworks with your friends! It would also be so much fun to top a cake with a bunch of these! These sparklers are so simple you can literally whip them up in no time!
Materials
red, white and blue paper straws
gold or silver metallic strands {can be bought in a bag at any party store}
optional gold star confetti
scissors

Simply cut your straws in half. Take about 4-5 strands of your metallic strands, hold them in the middle and curl the ends with your scissors as you would curling ribbon. Take the center of the curled strands, twist and stick into the end of your straw. If you desire, you could add a dab of glue in the straw to secure before you put the strands in, but it really is not necessary. You could also take the gold star confetti and glue a few to the ends of your curled metallic strands, to make them a little more festive! See...how easy is that!?!











Summer Love: Carnival

What brings back childhood summer feelings more than a carnival! The magic of the ferris wheels and the smell of sweet funnel cakes in the air, the silly games you have to play in hopes of winning an over sized stuffed bunny! There is just something about going to the carnival in the summer time. So here is our ode to the carnival, summer love!

Confectionary Crush: Connie Cupcake

You are in for a real treat...if you have not heard of Connie Cupcake we are so excited to introduce her to you! We saw a photo of one of Connie's stunning cakes on Pinterest a few weeks ago, and were literally blown away by the beauty, elegance and charm of this cake! It was so unique and dramatic, we could not stop looking at it. When we went to her site and started looking through her gallery we were overwhelmed. Connie's eye for detail and her natural talent are a force to be recon with! We don't know that we have ever described a cupcake, cream puff or donut tower as regal, but believe us the term is appropriate to use! If you are in to stunning, feminine, glittery confectionery works of art you will fall in love with Connie Cupcake too! 





We recently had the opportunity to interview Connie and are so excited for you to get to  know her a little bit better! We know you will be as smitten with her work as we are!

Icing: We are literally blown away by the beauty of your work, tell us a little bit about your background and how Connie Cupcake was founded.

Connie: I spent many years as a graphic designer before becoming a Producer/Director for television. I'd been in the business about 12 years when I started planning my wedding. I decided I wanted to make cupcakes instead of buying a wedding cake... I mean, how hard could it be? Well, since my culinary experience came down to setting things on fire - it wasn't as easy as I thought! I made cupcakes every Sunday leading up to our big day. I'd bring them into work and make people rate the cake and then the icing. At the send of 6 months, and after some very satisfied coworkers I had perfected it for my main event! So the wedding came and went, and while gliding through married bliss I realized that the cupcakes had really become a fondness I couldn't ignore. I was lonely without my cupcakes! So back I went to the kitchen. People starting placing orders and voila! Connie Cupcake was born.


Icing: All of your work is so creative, elaborate and innovative, where do you get your inspiration from?

Connie: Fashion, design, architecture and nature. Who needs more inspiration than that!

Icing: What is one of the most exciting projects you have worked on to date?

ConnieMy most exciting project hasn't happened yet. One of my best friends just got engaged and my wedding gift to her will be a cake and Tablescape. She's so girly, it will be all about mounds of ruffles. LOVE!




Icing: Are there any pastry chefs or designers that inspire or influence your work?


Connie: Maggie Austin is my favorite cake designer. The architecture of her work is stunning, and I love the simplicity of her designs. I wish I could edit myself like that. Perfection.

Icing: What is your favorite thing to create {cakes, cookies, cupcakes etc?}

Connie: I really love it all! My stacked cookies make me proudest I think...


Icing: You are located in Canada, do you ship any of your delicacies?  

ConnieGeeez... Just this week I got inquiries from Vegas, Ohio, NYC and NC. I guess I better figure out how to ship soon! I'm opening a studio and tasting room in Rosedale, Toronto in just over a month... Once that craziness is over maybe I'll have a date with FedEx!

Paris Brest with a strawberry creme chantilly filling

We thought we would start sharing a few different desserts that you may not have ever tasted or even heard of before! This first French delicacy, the Paris Brest, is named for a bike race in France which went between Paris and Brest. It is traditionally made with almond topped pate a choux and filled with praline flavored cream. But we wanted to put a little summer twist on it and filled the pate a choux with a luscious strawberry creme chantilly! This would be a perfect dessert to share at a summer dinner party.







Pate a Choux 
{recipe for pate a choux via here}
1 Cup water
6 Tablespoons butter
1 Tablespoon sugar plus 1/8 teaspoon salt
5 3/4 ounces flour {about a cup}
1 Cup eggs {about 4 large eggs and 2 egg whites}

Preheat oven to 425 degrees F
Line cookie sheets with parchment paper and take a 2" cookie cutter dip into flour and tap on
cookie sheet just to mark where you will pipe your pate a choux.
Fit a large star tip into your pipping bag.
Boil water, butter, and salt or sugar
Add flour and remove from heat. Work mixture together and return to heat.
Continue working the mixture until all flour is incorporated and dough forms a ball.
Transfer mixture into bowl of a standing mixer and let cool for 3 or 4 minutes.
With mixer on stir or lowest speed add eggs, 1 at a time, making sure the first egg is completely incorporated before continuing. Once all eggs have been added and the mixture is smooth put dough into piping bag fitted with a round tip.
Pipe immediately, tracing the flour into a donut shape. {There will be a hole in the center}
Pipe immediately into golfball-size shapes, 2 inches apart onto parchment lined sheet pans. Cook for 10 minutes, then turn the oven down to 350 degrees F and bake for 10 more minutes or until golden brown. Once they are removed from the oven pierce with a paring knife immediately to release steam. {Once they have cooled completely you can fill them with the creme chantilly}

Strawberry Creme Chantilly 
2 Cups whipping cream {very cold}
3-4 Tablespoons powdered sugar {depending on how sweet you want it}
1/2 Teaspoons pure vanilla extract
1 pint strawberries finely chopped

Start whipping the cream, add sugar and vanilla until soft peaks form.
Add strawberries just to incorporate. Do not over-mix or you will make butter ;)

Take your pate a choux a cut in half {horizontally}
Fill your strawberry creme chantilly into a pipping bag fitted with a large star tip and
fill the outer edges of your pate a choux. Sprinkle with powdered sugar and serve!






Summer Love: S'mores

Now that summer has almost officially started, we are dreaming about all of those delicious summer treats! One of our very favorites is s'mores. It is amazing how many different ways graham cracker, marshmallow and chocolate can be combined to make the perfect s'mores inspired dessert! From s'mores cakelettes to s'more donuts to s'more pie, this round up will have your craving these sweet chocolaty treats for sure!
















Patriotic Fringed Candy Poppers

We hope the summer doesn't fly by to fast! We seriously can not believe that the 4th of July is just a few weeks away! Well, we wanted to share a fun project that you can do for a 4th of July party or just for fun with your kids...patriotic fringed candy poppers! They are so easy and you can fill them with whatever you want, like a little pinata...candy, little toys, confetti, whatever makes you happy! They kind of remind us of little fireworks! These would be a great take home gift if you are planning a little 4th of July get together!
Materials: 
half of paper towel roll or toilet paper roll
1/2 sheet of white tissue paper
red, white and blue crepe paper
glue
scissors
ribbon {color and width of your choice}
whatever you want to fill them with {we just used confetti, silver gems and little rosettes}


Take a half sheet of white tissue paper and put your roll in the center of it. Put a line of glue along the length of your roll and roll the tissue paper around it. Once you have done that glue again so that it is secure.

At this point take some of your crepe paper and fold it over multiple times {this will make it easier for fringing, otherwise it will take a very long time} Cut little slits to create your fringe. Make sure you leave a little bit of room at the top, don't cut all the way through. Do this to all of your colors. 

You can then unfold your fringed paper. 

Now you can start attaching this to your roll. Start with your blue {start at the seem that the tissue paper made} and attach your fringe crepe paper with a dab of glue. Wrap your fringe around two times to create a fuller look, secure with a dab of glue. Go up just a little bit and repeat with your white and then your red. 


Turn your roll around and repeat on the other side, you will have a little gap of white in the middle when you are done. You can either leave it, or put a rosette or any other deco of your choice there. Finally, gather the ends of the tissue paper and tie with a thin white ribbon {or any ribbon of your choice}. Fill the popper and tie the other side to create the look of a piece of candy!
